Every year for Valentine's Day, I make cupcakes and give them out to all my lovers. This year, I went a bit fancier than I usually do. I made tiramisu cupcakes from scratch. (ya, not a box mix!!) I found a few recipes online and combined about 3-4 of them to create my own recipe (which still needs a bit of work). But damn were they delicious. I made the cakes with whole wheat flour and flax seed. And the filling with mascarpone cheese- basically the one ingredient that MAKES tiramisu so delicious. Used espresso from Starbucks and of course added some rum to the frosting. They are to die for. On Valentines day, I am going to dip strawberries, because who doesn't love strawberries dipped in melted chocolate? My tummy is already grumbling!!!
